Selling food or espresso from a mobile wooden cart is highly rewarding, but you must pass local health department inspections before serving your first customer. Navigating these requirements can be tricky, but incorporating them into your woodworking build from day one guarantees a smooth approval process.

1. The Multi-Sink Rule for Mobile Food Kiosks Most health codes require mobile food vendors to have a multi-sink system:

Dedicated Handwashing Sink A dedicated sink used *only* for washing hands, equipped with warm running water, soap, and paper towels.

Compartmentalized Warewashing Sinks 2 or 3 separate compartments for washing, rinsing, and sanitizing utensils.

Internal Plumbing Capacity Ensure your cart cabinet has enough internal width to house multiple fresh and wastewater jugs alongside the water pump and heater.

2. Smooth, Cleanable, and Food-Safe Surfaces Health departments require all food contact areas to be non-porous and easy to clean:

Countertop Sealing Techniques Seal your wood countertops with a food-safe epoxy or polyurethane finish to prevent bacteria from growing in the wood grain.

Metal Overlays and Work Surfaces Alternatively, install a stainless steel or butcher-block sheet on top of the wooden frame where cups and espresso machinery sit.
